Goats cheese pasta recipe

It's no secret that I like to save money, it's also no secret that I love to cook. So I'm going to share recipes for a cheap and easy meals that literally anyone can do, along with what it costs to make them.

Starting off with a goats cheese and vegetable pasta. This recipe serve 8. Perfect to freeze and have meals saved for later.

Ingredients:

600g of dry pasta - 34p
2 red peppers - 66p
500g of mushrooms - 92p
2 can of chopped tomatoes - 50p
1 large onion - 20p
150g packet of soft goats cheese - £1.49

Total cost of all ingredients is £4.11. Which means that each serving is approximately 51p. For that price you can't really go wrong especially since it includes multiple vegetables and the luxury of goats cheese.

1. Dice the onions and fry them in a deep saucepan until they have softened. Add the 2 cans of chopped tomatoes. Season as you wish. Continue to stir.

2. Chopped the peppers and mushrooms into large pieces- They will reduce in size when they cook!

3. In a separate frying pan, fry the peppers and mushrooms until you have removed majority of the water. Add them to the sauce mixture and let them simmer on a very low heat making sure to not burn the sauce.

4. Add pasta to boiling water and cook it just less that the time on the back of the packet so that the pasta is slightly undercooked - do not overcook the pasta! It will go soggy.

5. Drain the pasta and add the sauce into the pasta and mix it, making sure it is well combined.

6. Divide the pasta into portions, I tend to buy the foil trays from pound land. They are 10 for a £1 and perfect for freezing leftovers.

7. Leave the trays you will not be eating to cool, and put goats cheese on the portions you will. Add the cheese to the others when they have chilled - to prevent you melting the cheese. Put the pasta in the oven until the cheese has melted, it will only take a few minutes.

8. Enjoy your cheap pasta dish!
